Ingredients:

300g kangaroo fillet or steak, cut into small thin pieces

2 teaspoons extra virgin olive oil or ghee

2 medium organic zucchinis, peeled into ribbons with a julienne peeler

1 small organic, stalk celery, finely diced

1–2 teaspoons organic, finely grated ginger

1 teaspoon finely chopped organic, garlic (omit if histamine-sensitive)

2 tablespoons chopped fresh, organic coriander

Instructions:

Heat oil in a ceramic or stainless-steel pan over medium-high heat.

Add celery, garlic, and ginger, and sauté for 1–2 minutes until fragrant.

Add kangaroo pieces and sear quickly, turning occasionally, about 5–6 minutes total for medium doneness.

Add Celtic sea salt and chopped coriander. Toss to coat and remove from heat.

Lightly steam or sauté zucchini ribbons until just tender, then plate and top with the kangaroo.
