Herbed Soft-Scrambled Eggs (Candida-Safe & Gut-Gentle)

Ingredients:

  • 2 to 4 organic pasture-raised eggs

  • 1 teaspoon extra virgin olive oil or ghee

  • 1 tablespoon chopped fresh parsley or coriander (or a mix of both)

  • Season with Celtic sea salt [shop here] rich in trace minerals and BioHax-approved.

  • Optional: pinch of turmeric or fresh thyme (omit if histamine-sensitive)


Instructions:

  1. Crack eggs into a bowl. Add water and a pinch of Celtic salt, then whisk until slightly frothy.

  2. Heat olive oil or ghee in a small non-stick or ceramic pan over low to medium heat.

  3. Pour eggs into the pan and gently stir with a silicone spatula. Push from the edges toward the center, keeping the heat low for a soft, creamy texture.

  4. Once eggs are mostly set but still glossy, remove from heat. Stir through fresh herbs while warm.

  5. Serve immediately, on their own or over lightly sautéed silverbeet or steamed choko ribbons.
