Ingredients:

1 kilo organic top sirloin steak, cut into 2-inch cubes

2 medium, organic zucchinis, halved lengthwise and sliced into 1cm half-moons

3 cloves organic garlic, minced (not to be added raw)

2 tablespoons certified organic extra virgin olive oil (plus extra for sautéing)

1 teaspoon organic dried basil

1 teaspoon organic dried thyme

Instructions:
1. Marinate Like You Mean It
In a large bowl, toss steak with garlic, olive oil, basil, thyme, and a generous sprinkle of salt. Cover and refrigerate for 15 to 30 minutes.
2. Bring It Back to Life
Let the marinated steak sit out at room temperature for 15 minutes before cooking.
3. Wrap It Smart
Cut four large sheets of foil and line each with unbleached baking paper.
Divide the steak mixture evenly between the sheets.
Wrap the baking paper loosely around the contents, then seal the foil tightly to create your foil packs.
Grill Method
Preheat grill to high.
Place foil packs directly on the grill and cook for about 10 minutes per side.
Open carefully, garnish with parsley, and serve.
Oven Method
Preheat oven to 220°C.
Place foil packs on a baking tray and bake for 20 to 22 minutes, or until steak reaches an internal temperature of 60°C for medium-rare.
Optional: open foil during the final 2 minutes and broil for a touch of char.
Zucchini Prep (Do This Separately)
Cooking zucchini for the same duration as steak in a foil pack turns it into mush. Instead:

Sauté the zucchini separately in a pan with a drizzle of olive oil, a pinch of salt, and a dash of garlic

Cook for 4 to 5 minutes until just tender, not soggy

Serve as the bed for your steak packs, letting it soak up the juices without collapsing into baby food
Optional: salt your zucchini slices beforehand and pat them dry to remove excess water for even better texture.
